Así como consiguió aislar diferentes ácidos grasos como el oléico. También es atribuible a Chevreul, la definición de la reacción de saponificación como anóxica, es decir carente de oxígeno, al contrario de lo que se especulaba por aquella época.\u003cbr /\u003e\u003cbr /\u003eY por último describió, la naturaleza insaponificable, que no forma jabón en contacto con una base, de algunas materias grasas.
